Ground Beef, Broccoli, and Sweet Potato Bowls
Ingredients: Makes 5 servings
1 lb extra lean ground beef
1/2 medium onion, finely diced
2 tbsp minced garlic
2 large sweet potatoes (600 g), cubed evenly
22 oz broccoli, chopped into bite size pieces
1 tbsp butter
Seasoning: paprika, onion powder, garlic powder, dried parsley, knorr chicken bouillon, salt, black pepper
Instructions
Beef
Heat a large pan over medium heat
Add onion and garlic, cook until soft and fragrant
Add ground beef and break apart
Cook until fully browned and no longer pink
Season generously while cooking and adjust to taste
Broccoli
Add 1–2 cups water to a pot (about 1 inch deep) and bring to a boil
Place a steam basket in the pot
Add broccoli in an even layer, do not overcrowd
Cover and steam for 2–3 minutes until fork tender but still bright green
Work in batches if needed
Transfer to a bowl while warm. Add butter and mix until melted
Season with salt and pepper to taste
