Honey Mustard Chicken with Garlic Green Beans and Roasted Potatoes

Ingredients:

  • 1.5 lbs chicken breast, cut into small cubes

  • 3 tbsp mustard (more as needed)

  • 3 tbsp honey (more as needed)

  • 16 oz bag green beans (I used frozen microwavable)

  • 6 fresh red potatoes, cut into ½-inch cubes

  • ½ yellow onion, finely chopped

  • 4 cloves garlic, finely minced

  • 1 tbsp butter

  • 2 tsp olive oil

  • Seasoning: salt, pepper, garlic powder, onion powder, chicken bouillon, paprika

  • Garnish: finely chopped green onions, everything but the bagel seasoning

Instructions:

Potatoes

  • Add chopped potatoes to a pot of boiling water. Boil until slightly fork-tender. Drain well and transfer to a greased air fryer basket.

  • Spray potatoes with olive oil and air fry at 300°F for 10–15 minutes to remove excess moisture. Shake the basket every 5 minutes.

  • After 10–15 minutes, spray potatoes again with olive oil and season generously with salt, pepper, garlic powder, onion powder, and paprika

  • Increase heat to 375°F and continue air frying in 2–3 minute increments until desired crispiness is reached.
    Once done, set aside.

Green Beans

  • In a large pan over medium-low heat, heat 1 tsp olive oil and 1 tbsp butter. Once hot, add ½ the chopped onion and sauté for 2–3 minutes until soft. Add ½ the garlic and cook for 1–2 minutes until fragrant.

  • Prepare green beans according to package instructions. Drain excess water, then add beans to the pan.

  • Sauté for ~1 minute, just enough to coat the beans with the onion, garlic, and butter.

  • Season to taste (I used ~½ tsp chicken bouillon and pepper, but adjust as preferred).
    Set aside.

Chicken

  • In the same pan, heat the remaining 1 tsp olive oil. Add the rest of the onion and sauté 2–3 minutes until soft. Add remaining garlic and cook for 1–2 minutes until fragrant.

  • Add cubed chicken and cook until browned and internal temp reaches 165°F.

  • While chicken cooks, combine honey and mustard in a small bowl. Adjust sweetness or tanginess to your taste by adding more honey or mustard.

  • Once chicken is cooked through, pour honey mustard sauce into the pan and stir until chicken is well coated

  • Set aside.

Storage and Assembly

  • For meal prep, divide into 5 airtight containers. Store in the fridge until ready to eat.

  • Reheat in the microwave for 1–2 minutes or until fully heated through.

  • Garnish with green onion and everything but the bagel seasoning.
