Stuffed Bell Pepper Boats

Ingredients: serves 6-8

Stuffed Peppers:

  • 1 lb lean ground turkey or 96/4 lean ground beef

  • Cooking oil spray

  • 1 tablespoon minced garlic

  • 1 cup corn, fresh, frozen, or canned

  • 1 poblano pepper, deseeded and finely chopped

  • 1 bunch cilantro, finely chopped

  • 1/2 onion, finely chopped

  • 3-4 large bell peppers, halved and deseeded

  • 1/2 cup reduced-fat Mexican blend cheese

  • Seasoning: Fajita seasoning, Garlic powder, Onion powder, Chicken bouillon Salt and pepper to taste

  • Garnish: Cotija cheese, crema/sour cream, fresh cilantro

Black Beans:

  • 2 cans black beans, undrained (15 oz each)

  • 1 teaspoon cooking oil

  • 1/2 onion, finely chopped

  • 1 Roma tomato, finely chopped

  • Chicken bouillon, to taste

Instructions

1. Cook the Bell Peppers

  • Spray the air fryer basket with cooking oil.

  • Place the bell pepper halves cut-side down and spray them with oil.

  • Air fry at 400 F for 10-20 minutes, checking every 5 minutes, until browned and slightly charred.

  • Flip the peppers cut-side up, spray them again, and cook for another 5-10 minutes.

2. Make the filling

  • While the peppers cook, spray a large skillet with oil and heat over medium-high heat.

  • Add the corn and poblano pepper. Cook until lightly browned/charred. Transfer to a bowl and set aside.

  • Spray the skillet again. Add the onion and garlic and cook until softened.

  • Add the ground turkey or beef and cook until fully browned.

  • Season with fajita seasoning, garlic powder, onion powder, chicken bouillon, salt, and pepper.

  • Stir in the cooked corn and poblano pepper.

  • Remove from heat. Stir in the cilantro and shredded cheese.

3. Make the Black Beans

  • Heat 1 teaspoon of oil in a medium pan over medium-high heat.

  • Add the onion and Roma tomato. Cook until softened.

  • Add the black beans with their liquid.

  • Season with chicken bouillon and simmer until heated through and softened.

  • Let the beans cool slightly. Transfer them to a blender and pulse until they reach your desired consistency.

4. Assemble

  • Fill each bell pepper half with the turkey mixture.

  • Divide the black beans among serving containers.

  • Top the stuffed peppers and beans with Cotija cheese.

  • Store in the refrigerator until ready to serve.

5. To Reheat and Serve

  • Microwave for 1-2 minutes or until heated through.

  • Top with cilantro and crema or sour cream before serving.
